A handful of friends, an old butcher's shop in Jutland, and the idea of producing real whisky in Denmark – that's how the story of Stauning Distillery began in 2005. What seemed like a crazy experiment back then is now one of the most exciting success stories in the international whisky scene. Stauning has proven: Great whisky doesn't have to come from Scotland.

    From Butcher's Shop to World-Class Distillery

    Stauning was founded in 2005 by nine friends, all of whom had different professions – doctor, engineer, butcher. Their common denominator: a passion for whisky and the desire to make it themselves. They started with the simplest means in an old butcher's shop in the small town of Stauning on the west coast of Jutland.

    The first official Stauning Whisky was released in 2009. The reactions surprised even the founders: critics and connoisseurs were enthusiastic. In 2019, Diageo acquired a minority stake – a clear signal that the industry's giants were taking Stauning seriously. Nevertheless, the distillery remained true to its signature style.

    The Stauning Philosophy: Everything Under One Roof

    What distinguishes Stauning from most other distilleries is its consistent "farm-to-bottle" approach. Stauning malts its grain itself – on the floor, using traditional methods. This is elaborate, expensive, and time-consuming. But it gives the distillery a control over the taste that hardly any other distillery worldwide has.

    Distillation takes place in small pot stills – 24 of them are located in the new distillery, which opened in 2019. This multitude of small stills allows for enormous flexibility and complexity in the distillate.     Local Raw Materials, Danish Character

    Stauning consistently relies on Danish grain. Rye, barley, and wheat come from local farmers in the region. The heather used for the smoked bottlings grows in the immediate vicinity of the distillery. The result is a whisky that unmistakably tastes of its origin – of Jutland, of the North Sea, of Scandinavia.

    This connection between terroir and taste is not a marketing promise, but a handcrafted reality. Stauning shows that whisky can be an expression of its place – similar to a good wine.

    The Styles: Rye, Malt, Smoke and More

    Stauning produces several clearly defined styles, each highlighting a different aspect of the Danish terroir:

    • Rye: The distillery's signature style. Made from 100% Danish rye, matured in a combination of new and used oak casks. Robust, spicy, with a dry elegance.
    • Malt / Barley: Classic single malt style, but with a Danish touch. Fruity, approachable, complex.
    • Smoke: Smoked over Danish heather instead of peat – this results in a softer, herbaceous smoke that clearly differs from Islay whiskies.
    • Kaos: A blend of all Stauning styles – the name says it all. Playful, surprising, always different.

    Awards and International Recognition

    Stauning has accumulated an impressive list of awards in a short time. Medals at the World Whiskies Award, top ratings in Jim Murray's Whisky Bible, regular mentions in major trade magazines – the distillery is no longer an insider tip.

    The limited editions in particular – Distillery Editions, Anniversary Releases, Cask Finishes – are highly sought after by collectors and connoisseurs. If you can get your hands on a bottle, don't wait too long.
