1. What is peat?

Peat is neither rock nor soil in the classic sense – it is an intermediate stage. It forms when organic material – plants, moss, heather, algae, tree remnants – slowly decomposes over millennia in an oxygen-deprived and moist environment. The process is so slow that peat is considered a non-renewable resource: one meter of peat takes about 1,000 years to form.

In Scotland, peat covers approximately 23 percent of the land area – particularly in the Highlands, on the Hebrides, and on islands like Islay and Orkney. These peat bogs are not only a source of raw material for the whisky industry but also significant carbon sinks and habitats for rare animal and plant species.

The composition of peat varies considerably depending on the region: Islay peat contains a lot of seaweed and heather, Highland peat is richer in tree remnants and heather without marine influence, Irish peat is often softer and less dense. These differences are directly reflected in the taste of the whisky.


2. How is peat cut?

Peat cutting is one of the oldest traditional crafts in Scotland. Traditionally, peat is cut from the bog in rectangular blocks using a special spade called a tairsgeir or peat iron. The blocks are then air-dried – a process that can take weeks.

The traditional process involves several steps: First, the topmost layer of vegetation is removed and set aside. Then, the peat sods are cut into uniform blocks – typically 30 to 40 centimetres long, 10 to 15 centimetres wide, and 8 to 10 centimetres thick. The freshly cut sods are stood up and turned to ensure even drying. After drying, they are stacked and transported to the distillery.

Mechanical peat cutting is now common for large quantities. Special machines can efficiently process large areas – but many traditional distilleries and maltsters still prefer hand-cut peat because it is more uniform and of higher quality.

The depth of the cut influences the character of the peat: surface peat contains more heather and vegetation, while deeper peat is older, denser, and smokier. 3. Peat and Whisky: The Journey from Bog to Malt

Peat is used at a specific point in the whisky production process: during the kilning of germinated barley. After malting and germination, the barley must be dried to stop the germination process and preserve the malt. Traditionally, this was done in a kiln – a drying oven with a characteristic pagoda roof.

When peat is used as fuel in the kiln, the smoke rises through the malt and settles on the grains. The phenolic compounds in the peat smoke – primarily guaiacol, creosol, and other phenols – bind to the starch in the barley and remain throughout the entire production process: through mashing, fermentation, distillation, and maturation.

The result is a whisky that carries the character of the peat – not as a foreign element, but as an integral part of its flavour profile. 4. Why does Islay peat taste different?

Not all peats are alike – and that's why an Islay malt tastes different from a peated Highland whisky, even if both have the same PPM value.

Islay is a small island off the west coast of Scotland, constantly exposed to the Atlantic. The peat on Islay contains a high proportion of seaweed, kelp, and marine organisms – remnants from times when parts of the island were underwater. These marine components give Islay peat its characteristic scent and taste: iodine-like, salty, medicinal, with a depth that Highland peat lacks.

Highland peat, on the other hand, consists mainly of heather, grass, and tree remnants. The smoke is softer, sweeter, less marine. Orkney peat – used by Highland Park – is different again: rich in heather, with a floral, honey-sweet note.

The Lagavulin 16 Years and the Ardbeg Ten are classic examples of Islay peat in its purest form: marine, iodine-like, complex. The Port Charlotte SYC:01 shows how intense Islay peat can be when consistently applied.


5. PPM: The Unit of Smoke

PPM – Parts per Million – is the unit of measurement used to indicate the phenol content in malt and in the finished whisky. It indicates how many phenol molecules per million molecules are present in the malt.

The scale ranges from unpeated (0 PPM) to extreme values of 160 PPM or more. For orientation:

0-5 PPM: unpeated or minimally peated – no discernible smoke. 5-20 PPM: lightly peated – subtle smoke notes, often in the background. 20-40 PPM: medium peated – distinct smoke, but balanced. 40-60 PPM: heavily peated – intense smoke, Islay level. 60+ PPM: very heavily peated – Octomore territory, extreme smoke.

Important: The PPM value of the malt is not identical to the PPM value of the finished whisky. Distillation and maturation significantly reduce the phenol content – a malt with 50 PPM yields a whisky with about 20-25 PPM. 6. Sustainability: Is peat cutting still justifiable?

Peat is a non-renewable resource – that is a fact that increasingly concerns the whisky industry. Peat bogs are significant carbon sinks: globally, they store more carbon than all forests combined. When peat is cut and burned, this carbon is released.

The quantities consumed by the whisky industry are small in global comparison – but awareness is growing. Some distilleries and maltsters have begun to reduce or offset their peat use:

Bruichladdich has committed to using only peat from sustainably managed bogs and actively participating in bog restoration projects.

Diageo (Lagavulin, Caol Ila) has defined sustainability goals for its peat use and is investing in bog conservation projects on Islay.

Some craft distilleries are experimenting with alternative smoking materials – cherry wood, whisky casks, heather – to reduce peat consumption without sacrificing smoke notes.
