And more and more distilleries are deliberately refraining from it, proudly advertising "Non-Chill Filtered" on their labels.

1. What is Chill Filtering?
Chill filtering is a process used in whisky production to optically stabilize the finished whisky. The process consists of two steps:
First, the whisky is cooled to about 0 to 4 degrees Celsius. At this temperature, certain fatty acids, proteins, and esters precipitate out of the whisky – they become visible as a slight haze or cloudiness. Subsequently, the whisky is pressed through fine filters that retain these particles. The result is a crystal-clear whisky that remains optically flawless even when cold or after adding water.
The process was introduced in the mid-20th century when whisky was increasingly sold in countries with colder climates, and retailers received complaints about cloudy whisky. The solution was technically simple – but its consequences remain controversial to this day.
2. Why is Chill Filtering used?
The arguments for chill filtering are primarily practical and commercial in nature:
Optical Stability. A clear, filtered whisky looks the same in every glass, at every temperature, and after every addition of water. Cloudiness – even if completely harmless – can give inexperienced buyers the impression that the whisky is spoiled or of poor quality.
Commercial Reasons. Wholesalers, supermarkets, and international markets expect an optically consistent product. Complaints due to cloudiness are costly and damaging to a brand's image – especially for large brands with broad distribution.
Longer Shelf Life. Chill-filtered whiskies are more stable during storage and less susceptible to changes due to temperature fluctuations.

3. The arguments against it: What is lost?
This is where the debate gets interesting. Critics of chill filtering argue that the process not only removes cloudiness – but also flavor.
Fatty acids and esters as flavor carriers. The compounds that precipitate when cooled are not flavor-neutral particles. Fatty acids and esters significantly contribute to the texture, mouthfeel, and aromatic complexity of a whisky. Filtering them out removes part of the whisky's character.
Altered mouthfeel. Many tasters describe non-chill filtered whiskies as creamier, fuller, and with a longer finish. Chill-filtered whiskies, in contrast, often appear thinner and less complex – especially at lower alcohol strengths.
Intervention in a natural product. Whisky is a craft product that develops its character through distillation, maturation, and time. Chill filtering is an industrial intervention that subsequently alters this character – an argument that weighs heavily among purists.

4. Non-Chill Filtered: What does it mean on the label?
More and more distilleries are actively advertising "Non-Chill Filtered" or "unchillfiltered" on their labels. This is no coincidence: it's a deliberate positioning towards an informed audience that values authenticity and craftsmanship.
What the label specifically means: The whisky has not been chill-filtered and thus contains all the natural compounds that developed during distillation and maturation. It may become slightly cloudy when cold or after adding water – this is not a defect, but a sign of naturalness.

5. Chill Filtering and alcohol strength
There is a direct correlation between alcohol content and the necessity of chill filtering: The higher the alcohol content, the less a whisky tends to become cloudy – because alcohol keeps the problematic compounds in solution.
Whiskies with 46% ABV or more are therefore bottled by many distilleries without chill filtering. Below this limit – i.e., at the common 40 or 43% ABV – the risk of cloudiness is higher, which is why chill filtering is more often used there.

6. What do distilleries and experts say?
Opinions in the industry are divided – but the trend is clear: more and more distilleries, especially in the premium and craft segments, are opting out of chill filtering.
Whisky author and taster Dave Broom describes non-chill filtered whiskies as richer in texture and more complex. Master Distiller Billy Walker of GlenAllachie has switched all the distillery's bottlings to non-chill filtered – with the explicit goal of bringing more character to the glass.
On the other hand, major houses like Diageo argue that chill filtering has no measurable impact on the taste of their products – and that optical consistency is crucial for their target audience.
